Angus × Charolais, single mob. Dressed weights sit between 180 and 220 kilograms HSCW — small carcases, unhurried.
Paddock, break date, dressed weight, the cuts inside. If the receipt doesn't say it, we don't say it. Hand-numbered, founder-signed.
We're not building a meat company. We're putting one station's name on every cut that leaves the gate.
Operational truth
The paddock receipt rides inside every box — the paddock the animal ran on, the breed, the age at break, the dressed weight, and the cuts inside. If a fact isn't on the receipt, it doesn't appear in our copy.

The Three-Box Ladder

Tier I · Couples
Restaurant-quality nights in for two. A balanced ladder of steak, slow-cook and mince, with a founder's pick in every box.
Tier II · Family
A week of dinners and one big roast. Steak, slow-cook, mince, sausages and a butcher's-cut rotation — bones for stock thrown in.
Tier III · Premium
The Station Reserve. Tomahawk, dry-aged scotch, eye fillet, bone-in rib roast and dry-aged short rib — the cuts you'd order out, sent under our name.
The Country
The mob rotates across six named paddocks through the year, watered by Mulla Mulla and Cooee Creeks. Each animal is tagged to the paddock it broke from — that's the line on your receipt.

We'll write to you once — when the first boxes are ready to ship and the subscription opens. No newsletter. No marketing list. Just a note from the station the day the cattle break.
